1. fist download the iTunes backup already prepared ( no icloud and no find my iPhone )
2. go to iTunes backup folder and add the new one ( the one you download ) To find a list of your backups for mac go here: ~/Library/Application Support/MobileSync/Backup/ . to find a list of your backups for windows, go to \Users\(username)\AppData\Roaming\Apple Computer\MobileSync\Backup\
3. now go to iTunes, connect and thrust your iDevice.
4. go to your iPhone/ipad or ipod settings and reset all settings ( check video tutorial for details ).
5. iphone/ipad/ipod will restart and here you must be quick. right after itunes detect your iDevice, you must be fast and select restore backup. Select the one you download and wait for the injection. here the itunes will restore with the backup and reboot again without icloud.
6. enjoy ( DO NOT RESTORE OR UPDATE ) at least for now. We still working for final solution to find a way to remove icloud from apple servers too.
